docs: document deployment modes and Nextcloud log querying

Update ADR-018 with comprehensive deployment architecture and add
Nextcloud application log querying patterns to CLAUDE.md.

Changes:
- ADR-018 deployment modes documentation:
  - Mode 1: Basic single-user (development/simple)
  - Mode 2: Basic multi-user pass-through (no OIDC)
  - Mode 3: OAuth multi-user with progressive consent
  - Authentication flows for each mode
  - Communication path diagrams

- CLAUDE.md additions:

  - Common jq filters for debugging
